G4 (“Guadalajara 4th Generation”) is made at Destilería El Pandillo in Jesús María, Los Altos de Jalisco, Mexico. The Camarena family has been growing and distilling agave for over a century, and G4 is Felipe Camarena’s most personal project, built around sustainability and uncompromising quality.

What Makes It Reposado

“Reposado” means “rested.” By law, reposado tequila must be aged:

  • At least 2 months but less than 1 year in oak.

G4 Reposado is typically aged around 6–8 months in ex-bourbon American oak barrels, striking a balance between:

  • Bright, peppery, mineral highland agave
  • Soft layers of vanilla, caramel, light oak, and baking spice

The result: a reposado that feels refined and comfortable to sip, but still clearly agave‑forward.


Production Highlights

1. Agave

  • 100% Blue Weber agave, grown in the red, mineral-rich soils of the Jalisco highlands
  • Harvested at full maturity for concentrated sugars and complex, expressive flavors

2. Cooking

  • Agave piñas are slowly cooked in traditional brick ovens (hornos)
  • Gentle, extended roasting converts starches to sugars and builds deep cooked‑agave sweetness
  • Helps avoid harsh, bitter, or overly “industrial” notes

3. Crushing & Extraction

Destilería El Pandillo is known for ingenious, custom‑built equipment designed by Felipe Camarena:

  • Mechanical tahona / roller systems that simulate traditional stone‑wheel crushing
  • Careful extraction to capture flavor from both juice and fibers without over‑pulverizing the plant

This contributes to a rich, layered agave profile with subtle earthy and textural nuances.

4. Water & Fermentation

One of G4’s defining traits is its water:

  • Uses a 50/50 blend of collected rainwater and deep well water
  • Rainwater adds softness and purity; well water adds minerality and character

Fermentation:

  • Conducted in tanks with natural and/or carefully selected yeasts
  • No added sugars or shortcuts—fermentation is allowed to develop full aromatic complexity

5. Distillation

  • Double-distilled in copper stills
  • Copper removes undesirable compounds and keeps the spirit clean, bright, and flavorful
  • Distillation proof and cuts are selected to preserve agave character and mouthfeel, not to chase extreme neutrality

6. Aging

  • Rested for several months in used American oak ex‑bourbon barrels
  • Barrels add:
    • Light vanilla and caramel
    • Gentle toasted oak and spice
    • Softer, rounder texture

The oak influence is intentional but restrained—G4 aims for polish without wood dominance.


Tasting Notes

While individual batches may show slight variations, G4 Reposado has a consistent, recognizable style.

Appearance

  • Pale straw to light gold
  • Brilliant clarity with fine, slow legs on the glass, hinting at a lightly oily body

Nose (Aroma)

  • Dominant cooked agave: sweet, herbal, and slightly earthy
  • Fresh notes of citrus (lime, orange zest), green apple, and white pepper
  • Subtle vanilla, light caramel, and toasted oak from barrel aging
  • Faint mineral, grassy, and floral hints that reflect its highland origin and water blend

Palate (Taste)

  • Entry: Smooth, gently sweet with immediate agave presence
  • Mid‑palate:
    • Cooked agave, citrus, and pepper
    • Vanilla, honey, light toffee, and soft oak
    • Underlying minerality and a touch of herbs
  • Texture: Medium‑bodied, clean, with a lightly oily, satisfying mouthfeel

Finish

  • Medium to long, clean, and warming
  • Lingering notes of agave, pepper, citrus, and subtle vanilla/oak
  • Balanced dryness; not syrupy or cloying

How to Enjoy

Neat

  • Ideal served neat in a copita, tulip glass, or Glencairn at room temperature
  • Let it sit a couple of minutes to open, then nose gently to appreciate the layered agave, citrus, and vanilla.
