What Makes It a Reposado

Traditional Production

1. Agave & Harvest

2. Cooking

Agave piñas are slow-cooked in traditional brick ovens (hornos). This long, gentle roasting caramelizes sugars and develops rich, cooked-agave sweetness, avoiding the harsher, more industrial profile sometimes seen with faster autoclaves or diffusers.

3. Milling: Tahona Stone

One of El Tesoro’s defining features is its continued use of the tahona, a large stone wheel that crushes the cooked agave fibers.

  • This slow, pressure-based extraction pulls flavor from both juice and fibers.
  • It tends to give a more earthy, herbal, and textural character compared to roller-mill-only tequilas.
4. Fermentation

The agave juice (with some fiber) is fermented in open tanks, allowing native yeasts and the local microclimate to contribute nuance and complexity.
